A new guilt-free dessert #recipe creation: Raw Hazelnut Chocolate cupcakes for my upcoming blog (website still in the works). Something happened to my post of this recipe yesterday so here it is now!
Ingredients for the base
1 cup raw hazelnuts
1/2 cup raw almonds
1 cup dates
1 Tbsp raw cacao powder
1 pitted avocado
4 tbsp cacao powder
1/2-cup maple syrup
3 tbsp hazelnut or vanilla essence
Extra hazelnuts to garnish
Place all base ingredients into a food processor and process until a coarse sticky dough forms.
Transfer mixture into a silicon muffin tray and press down to compact the ingredients.
Place in the freezer to set while working on the chocolate frosting.
Frosting: Add the avocado, cacao powder, vanilla and sweetener of choice to a food processor and blend until creamy.
Place 2-3 tablespoons of the frosting onto the base layer of the muffins in the silicon tray.
Spread evenly with a teaspoon and top with hazelnuts, pressing each hazelnut gently to sit on top of the frosting.
Place the tray into the freezer for an hour to set. Once set, press them gently out of the mould and store in the fridge for up to a week.
