What a great first class at Civic Corps in Oakland this morning! The menu included Black Bean Veggie Quesadillas, Guacamole & Mango Salsa. Not only was the presentation lovely, but the finished product was delicious --even some visiting toddlers enjoyed the meal and ate all their vegetables! These young adults have set the bar high for the rest of the series! Amazing teamwork, guys! 🙌🏽👊🏽👍🏽

My week has been BRUTAL. My daddy died last month, and being an executor for his estate..well..it's sort of like being a bridesmaid. At first you're honoured, then you realize what a colossal pain in the ass it is! So after dealing with lawyers and banks and all of that, I'm ready for some serious antioxidants. Did I mention that I have a major case of laryngitis? Ahhhhhh beam me up, Scotty! I've been totally absent this week on here because life happens— well actually finals happen 😒 but after this weekend I'm done!! You guys don't even know how excited I am to have part of my life back again!! 🤸🏼‍♀️ I've thoroughly missed being on here and interacting with you guys, because you all always make my day, and I love being able to connect with like-minded people out there. This is just a space for me to post about health, food, and my life and be real with it all and I'm just so appreciative on how you all continually support me, I wish I knew you all personally!
