@beachbody posted a recipe for "nachos" so we threw our own spin on it and it was awesome! Preheat oven to 425*. Chop and mix together: cauliflower, onion, jalapeños, and bell peppers. Top with 1/4 tsp. each: cumin, garlic powder, sea salt, black pepper, and chili powder. Mix with the veggies and spices and spread evenly on a lightly oiled baking sheet, bake for 30 minutes, top with Monterey Jack and bake for another 4 minutes to melt cheese. I topped mine with some hot sauce, greek yogurt and more jalapeños! Yum!! #iamteambeachbody

My smoothie bowls might not look like a picture in a magazine, but what they lack in presentation, they make up for in taste!. I haven’t had one in awhile because I’ve been sick with the stomach bug - and then a never ending migraine. I was mostly migraine free today, though I had some twinges after dinner. It got so out of control that I was ready to go to the doctor or the ER to get help. I’ve had ones that lasted a long time, or painful debilitating ones, but not a combo. I certainly hope it doesn’t happen again. So my smoothie bowl is the same as my original recipe, but today I added coconut chips as a crunch factor. Totally recommend it. Coconut chips are pretty popular these days, and if you can’t find them, you can get a similar effect by buying coconut shavings (the big ones - not shredded coconut) and toasting them in a pan or in the oven. Give it a try, it’s a delicious alternative to nuts!
