Nothing purple today, but something spring-like in the COMPLEMENTARY colour … 😉💜💚 I had no time for lunch today, so I chose this quick option: my fave #avocado SMOOTHIE. It’s a savoury smoothie with avo, cucumber, parsley, dill, lemon and hemp seeds. With some crackers or crispbread this anti-inflammatory drink makes a great lunch or dinner. Happy Fri-Yay! Spring is in the air and right now I love to eat #zoodles with avocado, cherry tomatoes & capers. Avocado makes this dish nicely creamy. Zoodles are a delicious alternative to get more greens on your plate. But honestly, I stay often still hungry with dishes, which are prepared with Zoodles only. This is why I find the combo of Zoodles and Spaghetti particularly good. Less carbohydrates and calories, but still enough saturation. So happy that one of my fave Vietnamese restaurants, which I discovered over 11 years ago, has now its very own cook book. Today, I made my all-time favourite dish: Glasnoodle Salad with fried Tofu – made of sweet potatoes glasnoodles, carrots, kale, spinach, salad, ginger, soy sauce, chili, lime, garlic and many herbs such as Asian basil, mint and shiso.
