Maxibons by @healthsynergy 💛 Biscuit 1 cup hazelnut meal 1/2 cup buckwheat flour 1/3 cup cacao powder 1 tbsp mesquite powder 1 tsp baking powder 1 tsp vanilla bean paste 1/4 tsp Himalayan salt 2 tbsp coconut nectar 2 tbsp cashew butter 2 tbsp coconut oil 1/4 cup almond milk Ice cream 1 1/2 cups cashews (soaked for 3-6 hours) 1/3 cup coconut cream 1/4 cup almond milk 2 tsp coconut nectar 1 tbsp hulled tahini 1 1/2 tbsp cacao butter, melted 1 1/2 tbsp coconut oil, melted 1/4 tsp Himalayan salt 60 grams Loving Earth chocolate, chopped (+another 100 grams dark chocolate, melted, to dip) Method Preheat oven to 170 degrees C. Combine all dry biscuit ingredients in a mixing bowl, mix well. Then add nectar, cashew butter, coconut oil and almond milk, mix until all ingredients are combined. Divide the mixture into two parts and press flat into two greased and lined baking trays. Place in the oven and bake for 8-10 minutes. Allow to cool, then remove from baking tin and set aside while you make the ice cream centre. Combine all ice cream ingredients in a high power blender and blend until smooth (this takes a few minutes). Transfer to a bowl and place in the fridge for 10-15 minutes*. Then add chopped chocolate and stir through | Place in the freezer for 3-4 hours or until firm. Cut the biscuit base into even rectangles and sandwich ice-cream between two biscuits. Serve immediately or return to freezer. *This is so the chocolate does not melt as the blender will heat the ‘ice-cream’ mixture Makes 6 (large). Serves 12. Enjoy! #letscookvegan

The yummiest and most delicate Sichuan food I have had. Ingredients are of the highest quality and super fresh ( only young make chicken leg meat is used and chicken is only slaughtered 4pm daily) dishes are all light in spiciness and extremely fragrant as it should be for the pinnacle of Sichuan cooking.
