Apparently it's National Peanut Butter Day, so naturally I needed to celebrate this holiday! Peanut Chili Tofu Nourish Bowl on the menu this evening. Tofu marinated in a peanut chili sauce (sambal oelek, light brown sugar ginger, peanut butter, soy sauce, and rice wine vinegar) and then baked. Served alongside cumin and garlic roasted vegetables, black rice and a lime cilantro spinach salad.
