Happy Pancake Day 😀😋🍽
Been playing around with some recipes. For me, this one strikes the best balance between taste, texture, and nutrition...
1 scoop (35g) BPI Sports Vanilla Caramel Whey HD
1 scoop (35g) Plain Flour
1/2 tspn Baking Soda
1/4 tspn Salt
100ml Semi-skimmed Milk
1 Large Egg
Whisk together in a bowl. Then heat a non-stick frying pan over a medium/low heat. I tend not to use any butter, just simply wipe the pan with a paper towel using olive oil. Then add a ladle of batter, spread it slightly to get that round pancake shape. It may seem thick, especially if you're used to making crepes, but this is how it should be. Wait until the top of the pancake begins to bubble, then turn it over and cook until both sides are golden brown and the pancake has risen to about 1cm (½in) thick. The quantities above are enough for 5/6 individual pancakes.
After that, you can top them and stack them however you prefer. .
