Forget the meat. Our Puy Lentil Pate is our twist on the classic recipe and we think it tastes even better. Bold statement we know. #meatfreemonday INGREDIENTS 125g of Merchant Gourmet Simply Cooked Puy Lentils 1 clove of garlic, peeled and cut in half 800ml water 1/2 tsp salt 1/4 tsp sugar 4 tbsp extra virgin olive oil FOR THE TOPPING 2 large tomatoes, de-seeded (not skinned) and finely diced 2 tbsp sliced basil 4 tbsp extra virgin olive oil Salt, freshly ground black pepper and sugar METHOD 1. Add the lentils, garlic, salt, sugar and extra virgin olive oil to your food processor - add a little more olive oil or water if it needs loosening a little 2. Feeling like a Friday night Fakeaway? This healthy chicken korma is the one! Friday night feasting at it's best! INGREDIENTS 3 chicken breasts chopped into small chunks 2 x tablespoons of medium curry powder 1 x chopped red chilli, de-seeded 200g (half a tin) of chopped tomatoes 1 onion diced 1 green pepper diced 1 tin of coconut milk 2 x pouches of Merchant Gourmet Aromatic Indian Inspired Rice & Lentils Salt and Pepper to taste TO GARNISH 1 small tub of Greek yoghurt 1 small bunch of coriander leaves METHOD 1.Preheat the oven to 180 degrees, then combine all the ingredients together in a casserole dish 2.Cover and cook in the oven at 180 degrees for an hour and a half 3.Cook the pouches of Merchant Gourmet Aromatic Rice & Lentils according to the instructions on the back of pack 4.Serve with the curry topped with Greek Yogurt and Coriander leaves
